I LOVE a small batch cookie recipe! I will definitely make these next time I cool chickpeas.

For some reason in the last year I started to hate canned chickpeas, which is sad because it means I have to plan ahead if I want to eat them and I am bad at planning ahead!

I confess that I usually use instantpot-bean-juice if that's easier (and then have a jar on hand for a week and everything baked tends to get some, sheesh)...

I made them! I needed to chill them longer or maybe add more flour because they spread too much, but they tasted great. I didnt taste the aquafaba, but in general I don't usually taste it in things. Even when I've made meringue with it it doesn't taste beany to me!

oh, that is intriguing!! hmm, do you mind sharing what oil you used? I sometimes chill, sometimes don't, but don't quite see a correlation with my spreading with these - but! it is clearer colder in my kitchen than most : )

(and I'm 2 out of 4 cookie recipes that needed extra flour this weekend, too!)

I used canola. I've sort of become a lightly spoon the flour into the measuring cup person lately, which I've noticed isnt actually good practice when making a lot of recipes, so that's probably the problem more than the chilling. I admit i prefer weight measurement recipes (but i also hate that about myself). Haha. Fewer measuring cups to wash is always nice though.

Winter wonderland! I’m gonna give this recipe a try, as I can never get my cookies quite right. My favourite Aquafaba recipe is for pancakes! They get super fluffy when you add some whipped bean juice in there !!

I need help staying sane through the long hot sunny days up here. Not good for a pale little redhead!

So, vegan confession time, I have never used aquafaba. I know that knocks at least 20 points of my vegan score. I think about it every time I drain a tin of chickpeas. But I generally don't enjoy meringues as they are too sweet for me. BUT, using it unwhipped sounds like a much better deal. I have saved this recipe to make.

Funnily enough, I just baked some chocolate chip cookies today from a tub of vegan cookie dough I randomly found and so had to buy and the dough has aquafaba in it!
