Wow Jess, I didn’t know about your childhood mushroom trauma. I’m surprised/impressed you can eat them at all. I’ve always loved mushrooms, one thing I used to love making before the tree nut allergy decided to visit our own house was morels stuffed with sun-dried tomato cashew cheese, also inspired by your old blog. So much nostalgia for vegan things past in the post, whew!

This type of simple mushroom pasta is absolutely my fave! We have a good mushroom stand at our local farmers market and depending on who is working I can sometimes get a staggering amount of shiitakes or oyster mushrooms for $7 or $8.

Also I finally got a hand crank pasta maker, but then I realized that no surface in my kitchen or dining room or even living room (lol) had a spot to clamp the thing down, but finally I figured out that i can clamp it to the counter if i open the dishwasher first. Haha.

Mushroom season had finally arrived for you! How good. I know much about the mushroom catchup. Many a sibling of mine has hated mushrooms growing up (obvs different to your situation!!) and now most of us 6 can’t get enough of them. I’ve always been a mushroom loyalist so can’t relate. Happy foraging!

I LOVE mushrooms... however, a texture comparison you made in this post may mean I will never eat them again. lol

We have such a paltry offering of mushroom options here. There are so many mushrooms I have never been able to find. I make do with what I can.
