I've wanted to try khao soi since you first talked about it so many years ago and I still never have! Every time I see it on a menu it hae onions that I can't eat. Love this recap and reflection, Jess!
gah, yeah, the onions (of some variety, often shallot) are totes in the curry paste base - fortunately, I can totally handle that since it gets cooked in the past + pulverized - though I get you - and most importantly, appreciate your kind words for this therapeutic missive, paula!!!!
There is something so healing about the comfort found in food!
I have never had Khao Soi, I suspect given my current coconut and chilli intolerances it would not be such a comfort to me, alas.
Food I find comforting?? A pho full of mushrooms and tofu that comes with so much broth I have leftover broth to heat up and drink in a mug the next day. Beijing Black Bean from my Loving Hut. Tofu and avocado bun from Vietnamese restaurants on hot days. And always always always radish cakes and bbq bao and bean curd rolls, though those ones I have to travel down the coast for.
The 'shroomy + tofu pho sounds so good right now - I will have to cheers you a bowl from Vietnam soon, Susan!!!! And ahhhh...even more Vietnamese-esque goodness comfort food there! Aiming for the tasty healing of delicious food, indeed <3
Oh my gosh, I am so happy for you on this journey. By the way, So Thai in Anchorage makes a very good khao soi, if you're ever back north
