Dog person here, but I too have framed cats on my walls and cat socks! I suppose I probably would like to have a cat and a dog but alas, Jordan is allergic. So I'll just keep petting the neighborhood cats on walks with the kiddo!

Also, please tell me more about those roasted tofu hunks! They look amazing!!

KJ!!! This all makes me smile so big to read!! Plus, cats are pretty cute to spot (safely)mosy-ing around while biking, right? : D

And re: tofu hunks - they're so good! Firm or extra firm block, drained, briefly pressed, marinated for a few hours in dark wine or beer, some soy sauce, maybe liquid smoke, maybe balsamic vinegar, probably agave or brown sugar to caramelize, a lil sesame oil, lots of pepper, beet juice/picked beet liquid if you have it for color and sharpness...tofu cut in half or fourths however you want...flipped occasionally on sides as needed to permeate marinade...a few knife marks (a la the baked tofu hams out there) baked at 425 or 450 if you reallly want sear, roasted 23ish minutes, turn over, splash on extra marinade now and then, cook another 20ish until nicely browned. (I've done this in both electric and gas ovens and it really points out how particular ovens are)

I love the sound of that stew and the playful tone you take in recipe writing! And I will definitely be trying this whipped aquafaba pancake thing - did you find them fluffier than pancakes made with flax egg or another egg replacement?

Hi Anisha - thank you for the kind words! It's really nice to hear. Enjoy the aquafaba action! Indeed, I would say they're wildly fluffier vs. flax and other egg-y stuff (and I made banana flax pancakes last night, real talk, ha). Plus, it's via J. Kenji's (old?) "vegan experience" column so you know the food science and testing was LEGIT : )

I love both but have only ever been a cat guardian. I like the idea of having a dog to walk with, but the one time I almost adopted one I found him rather...large and hard to manage!

I was gushing over the cuddling brothers (it doesn't happen as often anymore) just minutes ago.
